Brut Rosé Gran Cuvée

PRODUCTION AREA: the high hills of the Val Tidone, with the vineyards located on a gentle hill with a west-southwestern exposure.
GRAPE VARIETIES: 100% Pinot Noir from clonal material selected in Champagne and Burgundy. The training system is Guyot and spurred cordon with about 5000 plants per hectare.
GRAPE HARVEST: by hand, in crates with manual bunch selection before pressing. It starts in the last week in August or first week in September.
YIELD: 40-50 hl of wine per hectare.
WINEMAKING: soft pressing of the whole berries after brief maceration in the press and first fermentation in temperature-controlled stainless steel tanks at 14-16°C. A small amount is fermented in French oak barrels.
SECOND FERMENTATION: with the traditional method in the winery’s cellars. Ageing on the lees lasts for at least 24-36 months before disgorgement.
COLOUR: pale pink with appealing orange nuances.
PERLAGE: continuous and subtle, fine and persistent froth.
AROMA: small, ripe, red and black fruits (raspberries, redcurrants, wild and sour cherries) with hints of spice and citrus fruit, especially candied orange peel.
FLAVOUR: an excellent and fine structure with balanced acidity, soft and lingering with good minerality.

It can be drunk as an aperitif or with any course of a meal. It goes well with Italian pasta and rice dishes, feathered game, white meat, lake fish, hard and medium-hard cheese.
